You would be amazed how many songs they remember especially old hymns. You could start a choir anytime of year and sing seasonal songs. 4th is coming up and odds are your residents will remember God Bless America and other patriotic songs

We are in the city and very pace compromised; but we do have a deck;so I get large pots and we grow flowers/ tomatoes, lots of peppers and all kinds of herbs. I think their favorte is the green tomatoes at the end of the season. We fry them up and eat them out on the deck.
